Tiki Tuesday: Some of Our Favorite Luau Recipes

I wanted to share some of my favorite luau foods that I like to serve our guests when we are entertaining them in The Hut. There are a plethora of recipes to choose from (some versions are vegan and vegetarian), yet I like to keep things simple and tend to stick to the three major food groups; SPAM, pineapple and rum. Hahaha!!!

Spicy Avocado Dip-Recipe from the Retro Luau book by Richard Perry

 

  • 2 ripe avocados
  • 2 tsp. lemon juice
  • 1/2 tsp. Worcestershire sauce
  • 2 tbsps curry powder
  • 1/2 tsp. garlic salt
  • pinch of cayenne pepper
  • 1 tbsp. sugar
  • 1/4 cup Macadamia nuts, chopped
  • 1/4 cup crisp bacon, crumbled

 

Peel, seed, and mash avocado with a fork. Combine all ingredients and mix well. Serve immediately or keep chilled and stir again just before serving. Serves 6 to 8.

Curry Mustard Glazed Meatballs (crockpot recipe)

  • 1 jar of pineapple preserves
  • 1 bottle of Dijon mustard (approximately 8 oz.)
  • 1 can of pineapple tidbits in juice, undrained
  • 1/2 cup of packed dark brown sugar
  • 1 tsp curry powder
  • 2-2.5 pounds of frozen cooked Italian-style meatballs 

In small saucepan, mix all ingredients except meatballs. Heat to boiling. Place meatballs into crockpot stirring in hot glaze. Cover and cook on high for 4 hours, stir well after 2 hours. Just before serving, stir again to coat meatballs with sauce.

Tiki Tuesday Luau Food SPAM sliders

SPAM Sliders

  • 2 cans of SPAM
  • King's Hawaiian Sweet Rolls
  • Fresh pineapple, cored and cut into slices
  • Pepper Jack cheese

Cut SPAM into about 1/4 inch slices and pan fry into crispy. Slice sweet rolls and then layer a crispy slice of SPAM on the bottom, piece of pepper jack cheese and half a pineapple slice on top.

A luau party isn't complete without a tropical libation or two, so here's a rum punch recipe we enjoy.

Trader Vic's Scorpion recipe

 

  • 1 1/2 bottles Puerto Rican rum
  • 2 oz. gin
  • 2 oz. brandy
  • 16 oz. lemon juice
  • 8 oz. orange juice
  • 8 oz. Orgeat (almond syrup)
  • 2 sprigs of mint
  • 1/2 bottle white wine

 

Mix thoroughly, pour over cracked ice.
